So, I have been on a long hunt for the perfect pancake recipe. I think I’ve found one that I’m happy to call perfect.
In the beginning, we used Bisquick. When I mentioned the prospect of making my own batter, Travis said it would be hard to beat the pre-mixed. Eventually, as my cooking skills developed and my cost cutting instincts grew, I knew it was time to transition.
My first batch, Travis refers to as pan-birthday cakes because they were so thick. He prefers thin pancakes and well… now I do too. We’ve been making our own batter for some time now, but have never perfected it. After experimenting with a number of pancake recipes, I decided that I wanted just one basic recipe I could always count on. That’s where Mr. Breakfast comes in.
I found Recipe #1647 on www.mrbreakfast.com. After two small modifications, it’s perfect for us. Normally, we add banana and walnuts or blueberries to the batter. We always cut the banana into rounds and add them as the batter is cooking. Until I found #1647, I had never considered mashing the banana into the batter. Why did I never think of this?
Modifications:
Splash of milk to thin the batter a little
Blueberries fresh or frozen
Note on bananas: We always have bananas in the freezer. Many times we let bananas get over ripe. Instead of tossing them, we save them in the freezer for muffins, pancakes, banana bread, smoothies, etc.
Note on blueberries: We hardly ever buy them from the store now. Ever since we picked some from a farm 3 years ago, we have preferred to pick our own and store them in the freezer. We also buy plenty of fresh blueberries at the farmer’s market when they are in season. This past blueberry season I was extremely fortunate that my friend Hannah invited me to pick blueberries at her Aunt’s house. We are still enjoying them!
Oh my! My mouth is watering. Beautiful picture AND beautiful pancakes! Oh dear, I may have to try them very soon. I haven't worked on perfecting one myself so maybe now I don't have to. ;-) I did make some with a sour cream base though - interesting.
ReplyDeleteI lOVE blueberries in my batter; haven't tried bananas. I'm glad you are still enjoying your blueberries. I'm going to have to go out again this summer.
I have tons of bananas in my freezer that before now were destined to become banana bread...I can't wait to try them in pancakes! How brilliant to put them in the batter :)
